HOW TO MAKE SUSHI RICE

Making sushi rice is simple if you have the right ingredients. The trick is to make it sticky enough to hold to nori, but not so sticky that it ends up all over your fingertips.

HERE'S WHAT YOU'll NEED: 
2 cups short grain rice 
2 cups water
Sushi Rice Vinegar
Rice Cooker

STEP 1:
Rinse the rice thoroughly. The key here is to wash away the starch. Do a double or triple rinse (see the white in the water - that's the starch).

STEP 2:
Add the rice and water to rice cooker and press start.

After the rice is done cooking, let it rest for 10 minutes.

STEP 4:
Place the rice in a large bowl. Use a rice paddle (a spatula works too) to evenly distribute the rice vinegar over the rice.

Fan the rice to cool it down as you stir in the vinegar.

When the rice has a glossy sheen, but no liquid in the bowl, then your sushi rice is ready to roll!


Here's a pro tip: when you're rolling maki wear gloves and frequently dip your hands in a bowl of water to keep the rice from sticking to you and not the roll.
